Ingredients
  

Ground Beef Filling:
  • 1 lb lean ground beef
  • 1 tbsp olive oil
  • 1 small yellow onion finely diced
  • 3 cloves garlic minced
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp paprika
  • ½ tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ cup water
Tacos:
  • 8 small flour or corn tortillas
  • 1 cup shredded cheddar or Mexican-blend cheese
Fresh Toppings:
  • 1 cup shredded lettuce
  • 1 medium tomato diced
  • ½ small red onion finely diced
  • 1 avocado
  • ½ cup salsa
  • ¼ cup sour cream
  • Fresh cilantro
  • Lime wedges

Method
 

  1. Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook until softened. Add the garlic and cook briefly until fragrant.
  2. Add the ground beef and cook, breaking it apart with a spatula, until browned and no longer pink.
  3. Stir in the chili powder, cumin, paprika, oregano, salt, black pepper, and water. Simmer for 2–3 minutes so the seasonings coat the beef and the flavors come together.
  4. Warm the tortillas in a dry skillet or microwave until soft and flexible.
  5. Fill each tortilla with seasoned ground beef and shredded cheese. Add lettuce, tomato, red onion, avocado, salsa, sour cream, cilantro, and a squeeze of lime as desired.
  6. For food safety, cook ground beef to an internal temperature of 160°F (71°C) before serving.
