Ingredients

Ground Beef and Potatoes
  • 1 pound lean ground beef
  • 1 ½ pounds Yukon Gold or russet potatoes peeled and diced into small cubes
  • 1 small yellow onion finely chopped
  • 3 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup low-sodium beef broth
Optional Add-Ins
  • 1 cup diced bell pepper
  • 1 cup sliced mushrooms
  • 1 cup fresh spinach
  • ½ cup shredded cheddar cheese
  • 2 tablespoons fresh parsley chopped
  • ¼ teaspoon red pepper flakes

Method

  1. Dice the potatoes into small, evenly sized cubes so they cook at the same rate.
  2. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook for 2–3 minutes, until softened.
  3. Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks.
  4. Add the minced garlic, paprika, Italian seasoning, garlic powder, salt, and black pepper. Stir and cook for about 1 minute.
  5. Add the diced potatoes and beef broth. Stir well, cover the skillet, and cook for about 12–15 minutes, stirring occasionally.
  6. Remove the lid and continue cooking for another 5–8 minutes, stirring occasionally, until the potatoes are tender and excess liquid has evaporated.
  7. If using bell peppers or mushrooms, add them during cooking and continue until the vegetables are tender.
  8. For a cheesy variation, sprinkle shredded cheddar over the skillet during the final minute and cover briefly until melted.
  9. Check the ground beef with a food thermometer and make sure it reaches 160°F (71°C).
  10. Garnish with fresh parsley and serve warm.

Notes

  • Cut the potatoes into evenly sized pieces for consistent cooking.
  • Use a large skillet to avoid overcrowding.
  • Allow the potatoes to brown slightly after they become tender for extra flavor.
  • Yukon Gold potatoes provide a creamy texture, while russet potatoes can develop crispier edges.
