Prepare the Beef:
- Pat the beef dry with paper towels. Season evenly with salt, black pepper, paprika, and garlic powder.
Brown the Beef:
- Heat olive oil in a large skillet or Dutch oven over medium-high heat. Sear the beef in batches for about 2–3 minutes per side until browned. Transfer to a plate.
Build the Gravy:
- Reduce the heat to medium. Add the onion and cook for 3–4 minutes until softened. Add garlic and cook for about 30 seconds. Stir in the flour and cook for 1 minute.
- Gradually add the beef broth while stirring and scraping the browned bits from the bottom of the pan. Stir in Worcestershire sauce, Dijon mustard, and Italian seasoning.
Simmer the Beef:
- Return the beef and its juices to the pan. Bring the gravy to a gentle simmer, reduce the heat to low, cover, and cook until the beef is tender. Cooking time depends on the cut and size of the beef.
Cook the Noodles:
- While the beef cooks, prepare the egg noodles according to the package directions until just tender. Drain well.
Combine Everything:
- Once the beef is tender, stir in the butter. Taste and adjust the seasoning. Add the cooked egg noodles and gently toss until coated in the gravy.
- If the sauce is too thick, add a small amount of warm beef broth until the desired consistency is reached.
Finish and Serve:
- Garnish with fresh parsley and optional red pepper flakes. Serve immediately while hot with additional gravy spooned over the noodles.
