Ingredients

  • 1 cup old-fashioned rolled oats
  • 2 cups milk dairy or preferred non-dairy milk
  • 1 medium apple peeled and finely diced
  • 1 tablespoon maple syrup or honey
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 tablespoon unsalted butter optional
For Serving:
  • ¼ cup chopped walnuts or pecans
  • 2 tablespoons Greek yogurt
  • 1 tablespoon raisins
  • 1 teaspoon chia seeds
  • Extra apple slices
  • Extra maple syrup
  • A small pinch of cinnamon

Method

  1. Peel the apple if desired, remove the core, and cut it into small, even pieces.
  2. Add the diced apple, optional butter, and a splash of milk to a medium saucepan. Cook over medium heat for about 3–4 minutes, stirring occasionally, until the apple begins to soften.
  3. Stir in the rolled oats, remaining milk, cinnamon, and salt.
  4. Bring the mixture to a gentle simmer, then reduce the heat to low.
  5. Cook for about 5–7 minutes, stirring regularly, until the oats are tender and creamy and the apples are softened.
  6. Remove the saucepan from the heat and stir in the maple syrup or honey and vanilla extract.
  7. If the oatmeal is too thick, add a small splash of milk and stir until it reaches your preferred consistency.
  8. Divide the oatmeal between two bowls.
  9. Top with chopped walnuts or pecans, Greek yogurt, raisins, fresh apple slices, extra cinnamon, or maple syrup as desired.
  10. Serve warm.

Notes

  • Sweet-tart apples such as Honeycrisp, Gala, or Fuji work especially well.
  • Cut the apple pieces evenly so they cook at a similar rate.
  • Use old-fashioned rolled oats for a creamy texture with some pleasant chew.
  • Cook the oatmeal over low heat to reduce the chance of scorching.
  • Stir regularly while the oats cook.
