Ingredients
  

Chicken
  • 6 bone-in skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
Optional Garnish
  • 2 tablespoons fresh parsley chopped
  • Lemon wedges for serving

Method
 

  1. Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease a baking dish.
  2. Pat the chicken thighs very dry with paper towels, especially the skin.
  3. Place the chicken in a bowl and drizzle with olive oil. Season with paprika, garlic powder, onion powder, Italian seasoning, salt, black pepper, and smoked paprika. Rub the seasoning evenly over the chicken.
  4. Arrange the chicken thighs skin-side up on the prepared baking sheet, leaving space between each piece.
  5. Bake uncovered for approximately 35–45 minutes, depending on the size of the chicken thighs. The skin should be golden and crispy, and the thickest part of the chicken should reach 165°F (74°C).
  6. Remove the chicken from the oven and let it rest for about 5 minutes.
  7. Garnish with fresh parsley and serve with lemon wedges if desired.

Notes

  • Pat the chicken skin completely dry before seasoning for better crispiness.
  • Bake the chicken uncovered and skin-side up.
  • Don't overcrowd the baking pan.
  • Use an instant-read thermometer to check that the chicken reaches 165°F (74°C).
  • For extra-crispy skin, broil for 1–2 minutes at the end, watching carefully.
  • Boneless, skinless chicken thighs can be used, but cooking time will be shorter and they won't have crispy skin.
  • Store leftovers in the refrigerator for 3–4 days.
  • Reheat in the oven to help the skin become crispy again.
  • Serve with roasted potatoes, rice, vegetables, or a fresh salad.
